Mapping Flavours

'The Flavour Thesaurus' has been one of the more successful - and esoteric - cookbook successes of recent years, focusing as it does on flavour pairings and combinations which, expectedly or unexpectedly, delight and excite the tastebuds.

Taking this one (giant) step further comes this incredible flavour map on the Scientific American website, which looks at which food share common flavour compounds, and how seemingly disparate foodstuffs share a surprising amount of flavours.

We recommend that you take a look and have a play - there's a huge amount of information contained on the graphic, which aside from anything else is very nicely put together, and you can spend a pleasurable 20 minutes or so investigating the hitherto unimagined links between (for example) lemons and olives. Go and explore!
